Plus size health tips: How to do an healthy meal preparation when traveling?

One thing about committing to better eating and meal preparation is that it cannot stop simply because you’re traveling. Since I was planning a trip to New York City to attend Full Figured Fashion Week, I had to find a way to stay focus and to not be tempted by a red velvet cake. Therefore, I decided to meal prep my food for the entire 7 days was going to be in NYC.

When I shared my #MealPrepMonday picture on Instagram, I had several questions about my recipes so here you have it:

Egg and spinach muffin:


  • 6 eggs
  • ½ medium onion, chopped
  • ½ medium bell pepper (color of your choice), chopped
  • 10 oz package fresh chopped spinach
  • 2 ounces feta cheese
  • Salt and Pepper


  1. Preheat oven to 350 degrees.
  2. Combine onion, bell peppers, spinach, feta cheese and egg beaters in a medium bowl, mixing well to distribute the spinach throughout. Add several shakes of salt and pepper or wait to season until after they are baked.
  3. Spray muffin pan with cooking spray. Fill each muffin cup approximately ⅔ of the way full. Bake for 20 minutes or until set and golden on top.



Since I couldn’t cross the border with fruits, I had to buy some at a local store close to where I was staying in NYC.

I made sure I had some good snacks to keep me away from eating any type of street food in NYC. The good thing with these kind of snacks is that they were easy to carry in my purse all over the city.




I also prepared for lunch a salad filling that I added to my lettuce and spinach


  • 1 can of tuna
  • ½ medium onion, chopped
  • 3 medium bell peppers (color of your choice), chopped
  • 1 can of chickpeas
  • 3 zucchinis
  • Salt and Pepper or in my case Haitian seasoning



Like usual I had my stemmed broccoli with Tilapia fish and sweet potatoes for diner.



All I was left to do was to orderly pack and label everything. I used Ziplocs bags and a food sealer to pack my food and voilà!






FYI…Since I started meal prepping I could noticed so much improvement on my body. Not bad for 247lbs…right?
